2 lbs. beef soup bones
2 lbs. beef short ribs
1 c. chopped onion
3 chopped carrots
2 cloves chopped garlic
1 bay leaf
1 tsp. thyme
1/2 tsp. paprika
8 c. water
8 c. chopped cabbage (1 head)
1 lb. tomatoes (canned are fine)
2 tsp. salt
3/4 tsp. tabasco sauce
1/4 c. chopped parsley
3 Tbsp. lemon juice
3 Tbsp. sugar
1 lb. sauerkraut

Directions:
Directions:
Place beef bones, onion, carrots, garlic, bay leaf in roasting pan. Top with short ribs, sprinkle with thyme and paprika. Roast uncovered at 450º for 30 minutes, 'til meat is brown. Transfer all to a large kettle. Use a little water to scrape the roasting pan into the kettle. Add water, cabbage, tomatoes, salt, Tabasco. Boil 1 1/2 hours. Skim fat. Add parsley, lemon juice, sugar, sauerkraut. Simmer uncovered for 1 more hour. Remove bones and ribs. Cool & remove meat from bones, cube it, then return to kettle and reheat. Serve with a hearty bread.
