6 3/4 cups warm water
3 Tbs. dry yeast
10 cups white flour
1 tsp. vanilla
6 or more cups wheat flour
6 Tbs. brown sugar
3 Tbs. salt
4 Tbs. vegetable oil

Directions:
If you prefer a 40% whole wheat bread use 1/2 tsp. maple flavor, 1 Tbs. molasses in addition to other ingredients. I add 1/2 cup of oatmeal to the mixture. Use 6 cups unbleached flour to start, then add whatever other grains or whole wheat flour you prefer. Put in a large bowl and cover. Let rise for about 1 hour or until doubled in height. Punch it down and make 6 small balls and let rise for 10 minutes. Grease the bread pans. Knead the bread dough and make sure there are no air bubbles. Put the dough in the bread pans. Let rise until dough rises above the bread pan. Bake at 350º for about 30 minutes or until when tapped it sounds hollow.
