1 Large onion sliced
1 Clove garlic minced
1/4 C. Celery chopped
1/4 butter or margarine
29 oz. Canned tomatoes
1 green Pepper minced
1 1/2 t.Salt
1/2 tsp. Pepper
1/8 tsp. Thyme
1 C. Uncooked rice
1 lb. Franks

Directions:
Directions:
saute onions, garlic, and celery in butter until soft. Add tomatoes, green pepper, and seasonings. Simmer covered for 10 mins; stirring occasionally. Stir in rice. Simmer covered 30 mins. Split franks in half lengthwise. Arrange layers of franks and rice in baking dish. Cover and bake for at 350º about 25 mins.
