3/4 C shortening
1/4 t salt
grated rind from one orange
1 1/2 C sugar
3 eggs, unbeaten
3 C cake flour, sifted
3 t baking powder
juice of 1 orange
2 T lemon juice
water
1 C coconut combined with rind from 1 orange

Directions:
Directions:
Combine shortening, salt and grated orange rind. Add sugar gradually and cream until light and fluffy. Add eggs one at a time and beat after each addition. Sift flour and baking powder together. Combine orange juice, lemon juice and enough water to make one cup. Add small amounts of flour alternately with orange juice mixture, beating after each addition until smooth. Pour batter into two greased and floured 9" cake pans which have been lined with waxed paper. Frost with boiled icing (see recipe in the After the Meat and Potatoes section). Decorate the top with the coconut/orange mixture.
