1/4 cup olive oil,
1 cup chopped onion,
1 clove garlic crushed,
1/2 - 1 tsp. curry,
1/2 tsp. salt,
1/2 - 1 tsp. coriander,
1/8 tsp. crushed red pepper,
3 cups chicken broth,
1 16. oz. can pumpkin,
1 cup half & half,
sour cream and chives (optional)

In a large pan, sauté onions and garlic until soft. Add curry powder, salt, coriander, and red pepper. Heat one minute and add broth. Boil gently uncovered for 15-20 minutes. Stir in pumpkin and half & half. Heat 5 minutes. Pour into blender container, cover and blend until creamy. Serve warm. Garnish with dollops of sour cream & chives.

I chop the onions fairly fine and do not bother to put through the blender. The soup has some texture, but I like it that way. If I do not have chicken broth, I use bouillon cubes.
