1 lb. pizza dough
2 (10 oz.) pkgs. frozen chopped spinach, thawed or 1 (16 oz.) pkg.
1/4 c. olive oil
1 cup onion, finely diced
1/4 c. garlic, thinly sliced
Parmesan cheese, generous shakes
1 c. shredded cheese (Mozzarella and cheddar mix)
1 tsp. table salt
Generous shakes of black pepper
1/2 tsp. crushed red pepper flakes

Place thawed spinach into a clean kitchen towel. Squeeze to remove water from the spinach. Set aside. Saute onion in half of olive oil for about 5 minutes. Add garlic and cook for about 30 seconds. Mix together spinach, onion and garlic. Season with salt, black pepper and crushed red pepper flakes. Spinach needs extra seasoning so taste it to be sure it has enough flavor (salt). Add remaining olive oil to mixture and marinate in refrigerator for a few hours or overnight.

Raise dough. Roll out on lightly floured board, then transfer to lightly greased cookie sheet. Stretch dough out on cookie sheet to about 9"x13". Layer dough with spinach mixture. Sprinkle Parmesan cheese and whatever shredded cheese you choose. Fold in thirds (top to the middle, then bottom to the middle) then pinch seam closed. Flip bread so seam is underneath. Brush with olive oil and sprinkle freshly ground black pepper on top. Cut 4-5 slits on top of bread. Bake 350º for 30 minutes.
