Boneless Pork Loin (about 1/3 lb. for each person to serve) This recipe is for 1 lb. loin
1/2 tsp. celery salt
1/2 tsp. garlic powder
1/2 tsp pepper
4 slices provolone cheese
2 cup fresh spinach
2 slices thin deli ham

Directions:
Directions:
Cut a lengthwise slit down the center of the loin to within 1/2 " of bottom.
Open loin so it lies flat.
On each half, make another lengthwise slit down the center to within 1/2 " of bottom; cover with plastic wrap.
Flatten to 1/4" thickness with meat tenderizer or bottom of fry pan.
Remove plastic wrap; sprinkle pork with 1/2 of seasoning. Layer with cheese, spinach and ham. Press down gently.
Roll up jelly-roll style, starting with the long side.
Tie the roast at 1 1/2" intervals, with kitchen string.
Sprinkle with remaining seasonings.
Place on a rack in a shallow baking pan.
Bake, uncovered at
425* 25 to30 minutes or until meat thermometer reads 160*.
Transfer to serving platter and let stand for 10 minutes before serving.
