3 c baking mix (Bisquick)
1 1/2 c water
2 eggs
1/2 pound shelled & deveined fresh shrimp or 1 pkg (8oz) frozen shrimp, thawed
1/2 pound sole fillet, cut into 1 1/2" pieces
1/4 pound fresh mushrooms, cut in half
2 carrots, cut into strips, 2 x 1/4"
1 green pepper, cut into strips 2 x 1/4"
1 c pared eggplant, cut into strips 2 x 1/4"
1 c parsley sprigs
shredded radishes, drained
1/4 c soy sauce
1/4 c white wine vinegar
1 T finely chopped green onion

Directions:
Directions:
Heat vegetable oil (1") in skillet to 350º. Beat baking mix, water & eggs with hand beater until smooth. Pat shrimp, sole & vegetables with paper towel; dip into batter. Fry several pieces at a time in hot oil, turning once until golden brown, 2 - 3 min; drain on paper towel. Dip into sauce then radishes.

Sauce: Mix soy sauce, vinegar & green onion.
