2 Tbsp olive oil
2 medium or 1 large onion, chopped
2 cloves garlic, minced
3 boxes (10 oz each) frozen chopped spinach, thawed and squeezed dry
2 cups crumbled feta
2-4 Tbsp lemon juice
coarse salt and pepper
2 boxes frozen puff pastry, thawed but still cold
flour for work surface
1 egg beaten with 2 Tbsp water for egg wash

Directions:
Directions:
In medium skillet, heat oil over medium heat; add onions and garlic. Cook, stirring occasionally, until tender, 5-7 minutes. Transfer to a large bowl; mix in spinach, feta, lemon juice. Season with salt and pepper and set aside.
On lightly floured work surface, roll out each portion of dough(still folded in thirds) into a 12 inch square. Cut into quarters(6 " squares) or 4" squares.
Spoon filling into center of squares. Brush 2 adjoining edges with egg wash and fold over to form a triangle. Press firmly to seal.
Turnovers can be frozen prior to cooking (see note)
To bake, heat oven to 375º. Place turnovers on parchment paper on a cookie sheet. Brush with egg wash. Bake until golden and puffed, 20-30 minutes.
Note: Freeze on a wax paper on a cookie sheet and then transfer to freezer bags.
