Hot Potato and Frisee Salad Recipe

3 medium heads of frisee
8 to 10 small red potatoes (16 to 18 quarter-sized)
1/4 medium red onion, thinly sliced
5 slices hickory-smoked bacon, optional

VINAIGRETTE
1 TB whole-grain mustard
1 clove garlic, minced
Pinch of sugar
Salt and freshly ground pepper, to taste
Juice of 1 lemon
4 TB olive oil

Directions:
Directions:
Bring potatoes to a boil. Simmer 15 minutes, or until fork easily pierces flesh.
Separate leaves from frisee, discarding bottom portion of leaves. Place frisee in large salad bowl. Add the onion.
Fry bacon until golden brown and crispy. Drain. Crumble into pieces and set aside.
For the vinaigrette, combine mustard, garlic, sugar, salt, and pepper, and mix into a paste. Add the lemon juice and olive oil, whisk until creamy.

When potatoes are tender, drain and cut into quarters, or leave whole if small. Add the warm potatoes to the salad bowl. Whisk the dressing again and drizzle over the salad. Toss. Add bacon and toss again.
Serve immediately.
