1 small bag dry pinto beans
1 large onion, diced
3 cloves garlic, diced
4 t salt
1/2 T cayenne pepper
1 t black pepper
1 Bay Leaf
1 lb sausage (preferred Hillshire Farms), sliced

Directions:
Directions:
Soak beans overnight in water and rinse. Put soaked beans in large pot and add new water until approximately 2" above top of beans. Add remaining ingredients (except sausage) and mix while bringing to a boil. Reduce heat, cover, and simmer for 2 hours while checking that water level stays the same. Add sausage, cover, and simmer additional 3-4 hours, adding water as needed to keep a thick soup consistency. Serve over cooked rice.
