Cake -
2 eggs
2 cups sugar
1/2 cup vegetable oil
dash of salt
2 t soda
2 t vanilla
2 t cinnamon
2 cups plus 2 1/2 T flour
1 cup chopped nuts
4 cups raw apples (diced fine and firmly packed)

Frosting - (it's best to double the frosting recipe!)
3 T soft butter
3 oz cream cheese
1 1/2 cups powdered sugar
1/2 t vanilla

Directions:
Directions:
Cream eggs, sugar, oil and vanilla. Combine dry ingredients and mix with wet mixture before adding apples. Batter will be stiff! Spread in pan and bake at 350º for 45 minutes.
Prettiest when baked in greased bundt pan, cooled for 10 minutes, then turned out on serving plate, but can be baked in 9"X13" cake pan.
Cool cake completely before frosting.

Cream together butter, cream cheese, and vanilla, before mixing in powdered sugar.
