20-40 apples
2 cups apple cider
For each pint of fruit add 1/2 cup sugar*, 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 tsp. allspice, 1/2 tsp. cloves

*sugar (I cut MaryBelle's sugar in half but it can be cut in half again without a problem)

Wash, core and quarter apples. Put in a stockpot. Stir in cider and cook on low until fruit is mushy.
Put fruit through a food mill to remove skins. Measure fruit back into a crockpot. Add the appropriate amount of sugar, cinnamon, nutmeg, allspice, and cloves. Stir well. Cover and cook on high for about 6-8 hours. Stir every few hours. Remove cover to allow fruit juices to cook down. Spoon into canning jars and proceed with canning instructions.

Depending on the apples and sugar content this can take days to cook down to the nice dark color desired. But it is so worth it. This is great on toast or as a sauce for turkey, chicken or even brisket. I don't eat pork but I imagine it would be good on that too.
