12 slices bacon
1 very large onion, chopped
6 cans Bush's Black Eyed Peas
1 can diced tomatoes
1 can Ro-Tel
1/2 T minced garlic
1 T salt
1/2 T chili powder
1/2 T pepper
2 cups water

Directions:
Directions:
Cook bacon until crisp, saute onion in bacon drippings until tender. Add crumbled bacon, onion, and bacon drippings to other ingredients in Crock Pot. Cook on high for 2 hrs, then cook on low for approximately 2 hours or until desired consistency.

I took this to the Ranch's New Year's Eve party this year and it was a hit! Serve with corn bread and could be a meal instead of a side.
