1 pkg. Chicken, cut up (fryer, roaster)
1 bunch of celery cut up
1 pound of carrots cut up
1 onion - leave whole
Salt and Pepper to taste

Directions:
Directions:
Clean chicken and remove as much fat as possible, reserving for rendering for chicken fat.
Cut up celery and carrots and add to large pot.
Peel onion, but leave whole, and add to pot
Cover all chicken and vegetables with water, adding seasoning to taste.
Simmer for 2 hours on medium low heat after initial boil
When done, remove chicken for another recipe, strain soup and add vegetables back to soup pot.
