2 lbs Pork Roast (not too lean) (the best pork roast to buy is pork roast supreme from Jewel)
1/4 Cup Vegetable Oil (NOT olive oil because it will burn)
Salt, Pepper and Oregano to Taste
Onion Powder (enough to spinkle over the pork)
1/2 Cup Water (or enough to fill the bottom of the pan about ¾ inches)
1/2 Cup Wine

Preheat oven to 400º.

Use a pan which is close in size to the pork roast (not too big) with a cover (if no cover use foil). Spray the pan with cooking spray. Place the pork roast in the pan and pour about 1/4 cup of vegetable oil over the roast. Season the entire pork roast with salt, pepper, oregano and onion powder to taste. Place in oven and allow to brown well on both sides (should look charred on both sides).

Take pan out of the oven and reduce oven to 350º. Pour water into pan (not over pork roast) cover and put back in the oven to continue to cook. After 45 minutes turn the pork roast over cover pan and continue to cook for another 45 minutes. Now remove the cover and allow the juices to cook down, around another 20 minutes. The juices should not be watery. Now add the wine and allow it to cook down another 15 minutes. This should leave you with a nice brown sauce which you can use as gravy.

Pour the gravy into a small pan and put it in the freezer to get the fat to harden. Skim off the fat and use the rest as gravy. The gravy should be rewarmed before serving.
