8 oz. fish (preferably white)
2 medium limes, extra if used for garnish
3 T. flat leaf parsley, extra if used for garnish
4 T. butter
4 T. olive oil
1 small onion, finely chopped
1 T. garlic, minced
1 small red pepper, finely chopped
1 small hot chili pepper
3 tomatoes, peeled, seeded and chopped
1/3 c orange juice
1/2 c. wine
salt and pepper to taste

Rinse fish with cold water and juice of 1 lime. Pat dry and place on a plate. Sprinkle juice of other 2 limes over fish and sprinkle with parsley and salt, then set aside. In a large saute pan melt butter and oil. Add onion, red pepper, chili pepper and garlic. Saute till veggies soften, 3 minutes. Add tomatoes and orange juice. Salt and pepper to taste. Bring to a boil. Add fish and about 1/2 c. wine. Baste fish for approx. 10 min. Garnish with lime wedges and parsley if desired.
