¼ c. onion, chopped
2 tbsp. butter
2 tbsp. flour
1 ¼ c. milk



1 c. cheddar cheese, grated
salt and pepper
3-5 potatoes, peeled & thinly sliced




Directions:
Directions:
Cook onion in butter until soft, add flour and cook for 2 minutes, stirring. Whisk in milk and cook until thick and bubbly. Remove from head and add cheese, stirring until melted; season with salt & pepper. Layer half of potatoes in a baking dish and sprinkle with salt & pepper. Cover with half of sauce. Layer rest of potato slices. Top with remainder of sauce. Sprinkle more grated cheese on top. Bake covered for 30 minutes or until potatoes are tender.

I use more than a cup of cheese because I like mine extra cheesy. The variety of cheese is up to you.......try asiago, gouda or swiss. You can use a food processor to slice the potatoes and grate the cheese so it takes only a few minutes to prepare.
