3 c. cooked brown rice
1/2 lb. diced, cooked chicken
1 1/4 c. sour cream
1 c. (4oz.) low fat shredded mexican cheese, divided
1 c. (4oz.) low fat shredded cheddar cheese, divided
1/4 tsp. salt
1/4 tsp. pepper
sliced olives
chopped tomatoes

Directions:
Directions:
Combine first 7 ingredients and spoon unto a greased 1 1/2 qt. baking dish. Sprinkle with remaining cheese, olives and tomatoes.
Bake uncovered at 350º F for 20-25 minutes.
