2 eggs
1 C. Milk
2 T. Veg. Oil
3 T. Butter, melted
1 1/4 C. All-purpose Flour
1 T. Baking Powder
1 T. Granulated Sugar
1/2 teaspoon salt

Directions:
Directions:
Place a nonstick griddle or a skillet over medium heat. In a large bowl, beat eggs until light and foamy. Add milk, oil, and butter. In another bowl, sift together flour, baking powder, sugar and salt. Beat dry ingredients into the liquid with a wire whisk.
When skillet is hot, pour in 1/4 C. batter for each pancake, leaving space between.
Flip when batter bubbles. Continue cooking for about a min. Serve immediately.

The fluffyness of the cakes are dependent on how foamy you get the eggs.
1/2 batch - 1 egg, 1/2 c milk, 1T. oil, 1 1/2 T butter, 1/2c+1T flour, 1 1/2 t baking powder, 1 1/2 t sugar, 1/4 t salt
