1 1/2 lbs. Chicken Breast, skinned, boned and cut into 1/2 inch cubes.
1/4 C. Veg. Oil
1 t. Ground Ginger
2 t. Sugar
1 T. Cornstarch
3 T. Water
3 T. Soy Sauce
1/3 C. Sherry
2 - 6oz. packages of Chinese Pea Pods, thawed.
1 can Sliced Mushrooms
1 can Sliced Water Chestnuts
1 C. Whole Almonds, blanched.

In a bowl, mix ginger, sugar, cornstarch, water, soy sauce and wine.
In a Wok heat 1/4 cup oil over high heat, add almonds and stir fry till browned. Remove from oil. Then reduce heat to medium and add cubed chicken and cook just till meat turns white. Pour in sauce mix from bowl and cook till sauce thickens. Add pea pods, mushrooms and water chestnuts. Stir fry till evenly glazed, than stir almonds back in to mix and serve.
