16 graham crackers, crushed
3 T. sugar
1/2 c. margarine or butter
Pie:
4 large or extra large egg yolks
1 (14 oz.) sweetened condensed milk
1/2 c. fresh key lime juice (approximately 12 key limes)
2 tsp. grated lime peel, green portion only
Whipping Cream Garnish:
1/2 c. whipping cream
2 tsp. granulated sugar
1/4 tsp. vanilla

Directions:
Directions:
For the crust, mix all three ingredients and press them into a 9" pie plate. Bake in a preheated 350ºF oven for 10-12 minutes until lightly browned. Place on a rack to cool. For the filling, use an electric mixer and beat egg yolks until they are thick and turn light yellow in color, careful not to over mix. Turn the mixer off and add sweetened condensed milk. Turn speed to low and add half of the lime juice. Once juice is incorporated, add the other half of the juice and zest; continue to mix until blended. Pour the mixture into pie shell and bake at 350ºF for 12 minutes. For whipped cream garnish, whip cream in a large bowl until stiff peaks are just about to form. Beat in vanilla and sugar until stiff peaks form. Serve with pie and enjoy!
