2 1/4 c. flour
3/4 tsp. double-acting baking powder
1/2 tsp. baking soda
1 tsp. salt
3/4 c. unsalted butter, softened
1 1/2 c. firmly packed brown sugar
1 T. vanilla
3 large eggs
2 c. mashed ripe banana (about 5 large)
12 oz. white chocolate chips
3 T. sour cream
3/4 c. chopped macadamia nuts
1 c. sweet coconut flakes

Directions:
Directions:
In a bowl, sift together flour, baking powder, baking soda and salt. In a large bowl, cream butter with the sugars, beat in vanilla, eggs (one at a time), banana, and sour cream. Add flour mixture and mix the batter until it is just combined. Stir in macadamia nuts and coconut. Divide the batter among 3 or 4 parchment lined loaf pans, and bake bread on center rack of a preheated 350° oven for 50-65 minutes, or until a tester comes out clean. Remove the breads from the pans and allow to cool for 10 minutes if you can wait that long! You may keep it chilled for 1 week or frozen for 1 month, if you so desire! YUMMY!!
