Ingredients: Get out a large stock pot to put everything in to. This recipe makes a large pot. You can portion it and freeze or can it. Cabbage: one small head shredded
Beets: 2-3 small beets either cubed small or shredded I also use the beet leaves if you have them--chopped Potatoes: cubed, about 1 large, more if you like potatoes Celery: Several stalks, chopped. Good time to use the center of the celery with the leaves. Carrots: 1-2 large carrots either sliced or shredded.
I put the above ingredients in the pot and add enough water for them to cook. To this I also add either George Washington Broth seasoning (abt.3 packages), chicken broth (or McKay's) or you can use canned vegetable broth for the vegetables to cook in. You can also add towards the end left over cooked turkey, chicken or beef if you like. I add enough water or broth so that it's "soup".
Add the following towards the end of cooking (after the onion-tomato mixture has been added: Bay leaves: about 3-4 (remove before serving) Dill: One package chopped Parsley: 1/2 bunch chopped
Second Part:
Take 1-2 onions--chop them & saute in at least a 10" frying pan. Before the onions are done add 4-5 garlic cloves that are finely chopped or crushed and saute also. Then add one large can of tomatoes with the juice and simmer with the onion and garlic. Cut the tomatoes into smaller pieces in the saute pan. Once this mixture is cooked I add about 1//4 C. flour that has been mixed into 1 C. cold water to thicken the onion-tomato mixture and cook for a bit longer.
Salt to taste (you can also use onion or garlic salt) You'll have to taste towards the end as the George Washington Broth is somewhat salty. Cayenne Pepper about 1/4 tsp. Pepper if desired.
The last part: I add 1-2 cans of white great northern beans and continue cooking until they are heated. The longer the soup simmers the better. You can add other vegetables such as green beans or vary amounts of the other vegetables depending what your family likes. Serve with about 1 tbsp. cream, sour cream or half & half if desired in the center.
