2 egg yolks
4 oz. veg. oil
3 tbsp. Creole mustard
2 tbsp. paprika
2 tbsp. catsup
1/2 tsp. salt
1/2 c. celery, chopped
1/2 c. green onions, chopped
1/4 c. parsley
1 clove garlic, or more to taste
1/2 t. white vinegar
2 tbsp. horseradish
Tabasco to taste
Juice of 1/2 lemon
1 bay leaf

Puree all ingredients in food processor.
Serve with your favorite boiled seafood.

In the 25 years Polly and Pop wintered with the Weilers in Brookshire,Texas, training dogs and going to field trials, they had the availability of fresh seafood from the Gulf of Mexico. This famous New Orleans sauce was a favorite.
