2 c all purpose flour
1 1/2 c sugar
3 1/2 t baking powder
1 t salt
1/2 c shortening
1 c milk
1 t vanilla
4 egg whites
2 fresh coconuts grated
save milk from coconut as well

Directions:
Directions:
mix dry ingredients together then add shortening 2/3 c milk and vanilla mix well. then add remaining wet ingredients mix well bake in a 350 oven for 30-35 minutes.
place bottom layer on a plate poke holes on cake and pour half of your coconut milk over it.
beat 5 egg whites until stiff like meringue but more sugar and add vanilla. Fold in grated coconut and spread onto cake, place second cake on top of it poke holes pour remaining milk over cake, put remaining frosting on it and down sides, cover in remaining fresh coconut. After done place in refrigerator to make it last.
