All Thanksgiving leftovers
leftover turkey - diced
leftover mashed potatoes
leftover fried broccoli - chopped
leftover cranberry sauce
leftover creamed spinach
flour
egg wash
bread crumbs

Directions:
Directions:
mix mashed potatoes with diced turkey and chopped fried broccoli and form patties about the size of a slider. dredge in flour, dip in egg wash and then cover with bread crumbs. brown in pan on medium heat with a little oil. everything is cooked so u just need to get a little crust on the croquettes and heat it thru. while they are cooking re-heat the creamed spinach. when everything is done serve the croquettes on top of creamed spinach and a dollop of cranberry sauce on top of each croquette.

great way to use some of your favorite leftovers in a new way instead of just having the same meal you just had. u can use stuffing instead of mashed potatoes too (probably don't need to bread it if u do it that way). can also use gravy instead of cranberries if you want.
