Marinate the following items in a package of Good Seasons Italian Dressing, (prepared as directed on the package with vinegar, oil, and water):


1 jar (6 oz) marinated artichoke hearts, chopped into small pieces.


1 jar (4 oz) diced pimentos, drained


2 cups chopped celery


1 cup chopped green pepper

Put above ingredients together and let stand aside (covered and refrigerated) while preparing the next ingredients:


2 boxes of Uncle Ben’s Long Grain & Wild Rice (cook as directed on package ----MINUS 1 and 1⁄4 cups water)


3 or 4 cups cooked cubed chicken breast (About 4 or 5 large breast). Boil chicken until tender and then cut into small bite size pieces.


When chicken and rice are cooked, mix together and then add 1 cup mayonnaise. Stir until blended. Then add marinated vegetables (above) to chicken, rice and mayo. Mix well & serve.

Personal Note: This is another LCS Faculty favorite! This recipe makes a lot of rice – plenty for leftovers. It is truly delicious and full-bodied (almost a meal in and of itself!). Enjoy!
