2 T. toasted sesame oil
2 eggs, lightly beaten
4 c. fresh-cut coleslaw mix
2 scallions, chopped
3 T. soy sauce
1 tsp. cornstarch
1 can (5oz.) sliced water chestnuts
1 can (15oz.) bean sprouts, drained
2 pkgs. (6oz.each) fully cooked teriyaki-flavored pork strips
6 (6") flour tortillas, warmed
hoisin sauce, optional

Directions:
Directions:
In a large skillet, heat 1 T. oil over medium-high heat. Add eggs, stirring, until cooked. Remove from skillet; chop.
To skillet add coleslaw mix and scallions; cook, stirring often, until tender, 4 minutes.
Combine soy sauce, 2 T. water, cornstarch and remaining oil. Add to skillet. Stir in water chestnuts, sprouts, pork and egg. Boil until thickened.
Reduce heat to medium; simmer until hot. Serve with warm tortillas and, if desired, hoisin.
