½ cup canola oil
½ cup sugar
1 egg
3 bananas, mashed
1 tsp. vanilla
1¼ cup flour
¼ cup quick cooking oats
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1 tsp cinnamon
½ tsp. allspice
½ cup semi-sweet chocolate chips (or raisins)

Preheat oven to 375º and line muffin pan with paper muffin cups. In a large bowl stir together oil and sugar, then add egg & bananas and mix thoroughly. Add vanilla. In a separate bowl combine the dry ingredients and add to the banana mixture. Mix thoroughly and add chocolate chips. Fill cups 2/3 and bake 12 - 15 minutes. Makes 12 muffins.
