1 pound dry red beans
4 quarts of water
4 slices of bacon chopped
2 packages of Lipton Onion soup mix
4 Chicken Bouillon Cubes
4 bay leaves
½ tsp. Thyme
1/2 tsp. Cayenne pepper
1 tsp. Black pepper
2 cups chopped onion
2 stalks chopped celery
2 large carrots diced
1 chopped bell pepper
1 bunch of chopped green onions
1 tbsp Minced garlic
1 small can tomato paste
Red wine vinegar to taste
Tabasco sauce or your favorite Hot Pepper Sauce to taste
Hot cooked rice

Directions:
Directions:
Soak beans overnight, drain, and wash. Add water, Lipton soup, beans, bay leaves, and bring to boil. Cook for about one hour. Add rest of ingredients, except tomato paste. Add tomato paste about ten minutes before done. Correct taste to the following ingredients list: salt and pepper to taste.
Red wine vinegar to taste and serve with hot cooked rice, Hot pepper sauce to taste.
