(Fish) Beer Batter for Fish Recipe

1/2 cup cornstarch
1/2 cup flour
1 tsp. Salt
1 cup beer
4 egg whites, stiffly beaten

Directions:
Directions:
Mix all ingredients for your fish batter.
Cut your fish into your serving pieces.
Heat oil in a skillet to about 375º or until bread cube browns.
Dip the fillets into your batter.
Fry in the oil until brown and crispy. (4 - 6 minutes)
Important that you turn ONLY ONCE!
Drain onto paper towel.

This recipe is a typical Minnesota recipe for fish. It's from my mom's best friend Casey Marti who owned Schell's brewery in New Ulm.
Of course if you are frying smaller fish (like smelt), the frying time is a lot less!
This is a great walleye recipe.
