2 lbs. of potatoes (raw, peeled and grated or 2 lbs. frozen hash brown potatoes)
3-4 c. of vegetable broth or chicken broth (depending on your preference)
1 1/2-2 tsp. salt
1 tsp. pepper
1 med. yellow onion, minced
4 stalks of celery, minced
3 T. butter
3 c. half and half or regular milk
3 c. shredded cheese (cheddar or Monterey jack)

Add broth, salt, and pepper in crockpot. Add potatoes and stir. Melt butter over low heat in a frying pan. Add minced onion and minced celery and cook over medium heat until vegetables start to brown. Add celery and onion to crock pot, evenly distributing mixture with potatoes. Cook on low for 4 hours. Mash mixture with a potato masher to your favored consistency. Add 1 cup of shredded cheese, stirring until melted, and repeat until all 3 cups of cheese have been added. Stir in half and half or regular milk, one cup at a time until thoroughly mixed. Soup will be ready for serving!
