1 can artichoke hearts (not marinated), drained and chopped
1 c. mayonnaise (Polly prefers Hellmann's)
1 c. grated Parmesan cheese
1 tsp. fresh lemon juice
chips, raw vegetables, little crackers for dipping

Directions:

Stir all ingredients together, place in a buttered baking dish, and bake for 20 minutes at 350º .

Incredibly good, incredibly rich. Though similar to the Houston dip with spinach, this comes from a different place (tennis friends in Rochester) and is loaded with calories that never made Polly overweight because she was so busy hitting the ball back and forth. She played into her 80s. Beat that!
