1 lemon
3 3/4 cups blueberries
3/4 cup sugar
4 tbsp water
1-17.6 oz container of nonfat greek yogurt (plain)
1-3 oz pkg of ladyfingers

Directions:
1. grate 1 1/2 tsp zest and squeeze 1/4 cup juice from lemon
2. combine 1 1/2 cups blueberries, 1/4 cup sugar and 1 tbsp water and heat over med heat for 5 min (until blueberries soften and juice thickens)
3. microwave 1/4 cup sugar and 3 tbsp water on high for 1 min and then stir in 3 tbsp of lemon juice and 1 tsp of zest
4. stir together yogurt, 1/4 cup sugar, 1 tbsp juice and 1/2 tsp zest
5. in an 8x8 glass or ceramic baking dish: arrange half the lady fingers, brush with half the syrup, spoon blueberry mixture over top
6. place remaining lady fingers in next (I like to arrange them perpendicular to the first layer) and brush with the rest of the syrup
7. spoon yogurt on top and refrigerate overnight (covered tightly so the yogurt doesn't make a skin)
8. top with remaining blueberries before serving
