1 bell pepper (chopped, any color)
10 eggs
1/2 cup skim milk
2 tsp dijon mustard
1 tsp lemon pepper seasoning
1 tsp curry powder
1/4 tsp salt
1 tsp olive oil
6-8 oz asparagus spears
1 cup cherry tomatoes
2 english muffins (split and halved)
4 oz (thinly sliced) OR 1 cup (shredded) mozzarella cheese
1/4 cup fresh basil leaves

1. preheat oven to 375
2. whisk eggs, milk, mustard, lemon pepper, curry and salt
3. in a 12 inch non stick oven going skillet, heat oil over med heat, add asparagus and cook 1-2 min
4. remove asparagus from skillet and add pepper for 2 min, then add tomatoes until the skins pop
5. arrange muffins on top of veggies, slowly pour egg mixture over everything making sure to saturate the muffins and top with asparagus
6. put skillet in oven and bake uncovered for 12 min then top with cheese and broil for 2-3 min
7. cut into wedges to serve
