4 cups cauliflower (finely chopped)
1 cup fat free mayo
4 wedges laughing cow light swiss
2 tbsp yellow mustard
1/2 tsp paprika
1/4 tsp salt
1/4 tsp pepper
12 egg whites (hard boiled and chopped)
1 cup celery (chopped)
1 cup cucumber (chopped)
1/2 cup scallion (chopped)
1/4 cup sweet relish

Directions:
Directions:
1. steam cauliflower in microwave with 1/3 cup water 6-8 min until soft, drain
2. blend 1/2 cauliflower with mayo, cheese, mustard and spices
3. add all other ingredients to unblended cauliflower
4. add puree and stir to coat
5. make into sandwiches, wraps, or eat lettuce and other veggies
