10 oz skinless boneless salmon (pouches or cans drained or cook some filets and shred the meat)
1/4 cup parsley
1/4 cup kalamata olives (chopped)
1/4 cup red onion (diced)
2 tbsp extra virgin olive oil
1/2 tsp lemon zest
2 tbsp lemon juice
salt and pepper
12 romaine leaves (ribs removed)
4 whole wheat tortillas (like la tortilla or mission low carb)
1/2 cup roasted red sweet peppers (from a bottle and sliced)
1 large tomato (sliced)

1. combine first 7 ingredients and season with salt and pepper to taste
2. place some lettuce, tomato, bell peppers and 1/4 of mixture into each tortilla
