Olive oil for frying
1 3/4 c. freshly grated Parmesan cheese
1 1/2 c. panko (Japanese breadcrumbs)
3/4 tsp. salt
2 large eggs
3 medium zucchini, cut into 3"long x1/2"wide strips

Directions:
Directions:
Pour enough oil in large frying pan to reach a depth of 2 inches. Heat the oil over medium heat to a temperature of 350º F. Stir 1 1/2 c. cheese, panko and salt in a medium bowl to blend. In another bowl whisk the egg to smooth. Working in batches coat the zucchini strips with egg and allow to drip back into bowl, then coat with panko mixture patting to coat completely. Place on a cookie sheet. When oil is at 350º fry zucchini in single layer batches until golden brown, about 3 minutes. Using a slotted spoon, transfer to paper towels to drain.
sprinkle with remaining Parmesan and serve.
