3 cups almond flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/4 cup melted butter
1/4 cup honey
1 1/2 tsp vanilla extract
3 eggs
1 cup shredded carrot
1 cup shredded zucchini
1 chopped apple
1 cup raw cashews (soak for 3 hours)
1/2 cup fresh apple juice
2 pitted Medjool dates
1 tbsp. honey
1 vanilla bean, sees scrapped and pod discarded.

Directions:

Preheat the oven to 350º.
Grease a 9 inch cake pan.
In a bowl combine dry ingredients.
In a separate bowl combine we ingredients.
Pour wet mixture into the dry mixture and stir to incorporate.
Pour into a prepared cake pan and cook in oven 40 to 45 minutes or until it passes the toothpick test.
For the vanilla cream place the cashews, apple juice, Medjool dates, honey, and vanilla been in a high speed blender and blend until very smooth.
Spread on top of the Harvest cake.
