1 medium onion (cut into wedges)
4 medium potatoes, peeled and quartered
1 lb. baby carrots
3 cups water
3 garlic cloves, minced
1 bay leaf
2 tbsp sugar
2 tbsp cider vinegar
1/2 tsp pepper
1 (3 lb.) corned beef brisket with spice packet. Cut the brisket in half
1 small head of cabbage, cut into wedges

Directions:
Directions:
Place the onion, potatoes and carrots into a slow cooker.
Combiner water, garlic, bay leaf, sugar, vinegar, pepper and the contents of the spice packet.
Pour over vegetables.
Top with the two pieces of brisket and cabbage.
Cover and cook on low for 8 to 9 hours or until meat and vegetables are tender.
Remove the bay leaf before serving.

I have tried a lot of recipes and this one seems to be the one everyone liked best. It's a good tip to cut the brisket in two before cooking it.
