2 1/2 c. yellow cornmeal
2 well beaten eggs
1 c. sweet milk
1/2 t. soda
1 t. salt
1 can yellow creamed corn (17 oz.)
1/4 c. bacon grease or cooking oil

Filling
1 lb. ground meat
1/2 lb. American cheese
1 large onion, chopped
1-4 jalapeño peppers or a 4 oz. can of chopped green chilies

Grease a large iron skillet and heat. Lightly sprinkle with cornmeal -like flouring a cake pan. Brown the cornmeal. Pour half of the batter in the skillet. Sprinkle cheese, onions, meat, and peppers over the batter. Cover with the remaining batter and cook for about 1 hour at 350º.
