(Shrimp) Shrimp and Grits Recipe

2 servings of cooked grits
2 tbsp. olive oil
1/2 cup diced tasso ham (or prosciutto)
2 tbsp. diced leeks
2 tbsp diced onion
2 tbsp diced green peppers
20 medium to large shrimp, peeled and de-veined with tails on.
1 to 2 tbsp white wine
1 cup heavy cream
salt and pepper to taste

Directions:

Cook grits according to package directions, set aside but keep warm.
Heat oil a large skillet over medium high heat.
Add ham and saute until crisp.
Add diced vegetables and saute until the onions are translucent.
Add shrimp and saute for 30 to 45 seconds or until pink.
Remove from the pan and set aside.
Deglaze the pan with a little white wine.
Slowly add the cream and let reduce until thickened.
Season with salt and pepper to taste.
Divide the grits amount 2 serving plates.
Line plate edges with shrimp.
Pour sauce over grits.
Garnish with chopped green onion tops.

Tasso ham may be hard to find. It is a Cajun item and not often found outside of Louisiana. However it can be mailed ordered off the internet. Otherwise you can use salt pork, pancetta or prosciutto.
