Veggie Quesadillas Recipe

2 large sweet potatoes
one can black beans
2-3 cups broccoli florets (frozen is OK)
8 oz. shredded cheese (cheddar and/or jack)
8 burrito-size whole wheat flour tortillas
For serving: sour cream, salsa, avocado or guacamole, cilantro

Bake and peel sweet potatoes. (Microwave for 8 minutes to start; increase as necessary.)
Cook broccoli on stovetop in 1/2 cup water until tender & drain. Add rinsed black beans to pot and warm. Chop cooked sweet potato into centimeter cubes and add to pot. Mix well, breaking up broccoli.
Place a tortilla on a dry skillet over medium heat and sprinkle with 1/4 cup cheese. Melt. Drop a big spoonful of the veggie mixture (1/8 of it) onto the tortilla and fold in half before the thing gets too brown on the bottom. Remove from heat. Serve with all your favorite Tex-Mex accoutrements.

Easier if you bake the sweet potatoes ahead a bit so you don't burn yourself peeling them!
