Five medium sized red potatoes

Six slices bacon

¾ cup chopped green onions

1 1/2 T. flour

2 ¼ cups cider vinegar

½ cup water

4 T sugar

3 tsp salt

½ tsp pepper

Directions:
Directions:
Wash and dice red potatoes with skins on. (small bite size pieces)

Cook in salted boiling water for about 10 minutes or until firm but not soft; drain and place in large bowl or container

Cut up bacon in small pieces and fry, reserving grease

Saute green onions for a minute in bacon grease until they are soft

Add flour to bacon grease in pan to make a roux

Add vinegar, salt, pepper, sugar stirring until mixture thickens and is smooth. Use water to thin out mixture if too thick.

Pour over potatoes and toss to coat.

It's better to let potatoes an sauce cool somewhat before mixing together. If too hot, potatoes will absorb the sauce and it's better with some sauce.
