4 lb cheap hamburger
1/4 c curing salt
1 1/2 t garlic powder
1 1/2 t pepper
2 1/2 t mustard seed
large bowl to mix all ingredients

Cover and chill 24 hours. Shape into 4-8" logs. Roll up in a piece of nylon net. Net is 12"x18". Tie ends with string. On rack in broiler pan, bake at 200 degrees for 4 1/2 hours. Remove from oven and remove net. Net can be reused. Pat rolls with paper towels. Cool slightly and wrap in foil and refrigerate.
