1 ¾ cup all purpose flour
1 ½ cup sugar
1 cup chopped nuts
2 ripe medium bananas, mashed
2 eggs
½ cup vegetable oil
¼ cup plus 1 tablespoon buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
½ teaspoon salt

Preheat oven to 325°F. Grease and flour 9"x5" loaf pan. Combine all ingredients and mix well. Transfer to pan. Bake until top is golden and splits slightly (check at 50 minutes).
