2 Tbsp. olive oil
1 1/2 favorite salsa (red or green)
2 medium potatoes, peeled and thinly sliced.
2 whole chicken breasts, halved
1 medium onion, thinly sliced.
1 tsp. dried oregano
Salt and pepper to taste.

Directions:
Directions:
Preheat the oven to 350º.
Place the oil in the bottom of a Dutch oven, circle to coat the entire bottom.
Add 1/2 of the salsa to coat a layer over the olive oil.
Top with one layer of sliced potatoes.
Lay the breasts on top of the potatoes.
Over the breasts, add one layer of onion slices. Pour over the remaining 1/2 of the salsa.
Sprinkle with oregano and salt and pepper to taste.
Cover and bake at 350º for 1 1/2 hours.

This is a recipe I used several times and is always a hit when I served it. I wanted to use it for the Food For Thought Cookbook, but I used up my limit. So I entered under our dog's name - Wallis. Thus this will always be known as Wallis's Cataplana, just like her famous meatloaf, Wallis's meatloaf!
