1/2 cup slivered almonds, toasted
1/4 cup panko bread crumbs
1 teaspoon lemon pepper seasoning
1/4 cup egg substitute or 1 beaten egg
4 frozen cod or other white-fleshed fish pieces (about 1 pound), thawed

Directions:
Directions:
Place almonds in work bowl of food processor fitted with steel knife blade; pulse until finely chopped. In shallow dish, combine chopped almonds, panko, and lemon pepper. Place egg substitute in second shallow dish. Dip fish into egg, then coat with crumbs. Place on foil-lined jellyroll pan. Bake in 425°F. oven until fish flakes easily with fork and internal temperature is 145°F., about 15 minutes (about 10 minutes per inch of thickness).
