1 stick butter
Chopped onion
Potatoes peeled and in tiny pieces. I like mine almost like rice
Milk or cream.
Carrots sliced thin
Salt and pepper
Flour to make thickening.
Crumbled cooked bacon
Shredded cheddar cheese
Sometimes I use a little chicken broth

Directions:
Directions:
Heat water in saucepan and cook peeled and cut up potatoes and carrots until just slightly soft. Drain. Melt butter in heavy pan. Make sure enough to cover bottom of pan. Sauté onions until golden. I may add a little garlic here to spice the soup Do not allow to brown or burn. Add milk and potato mixture. Should have enough milk to cover veggies and form soup. I fill pan half up with milk then add the potatoes and carrots. Put some cream, milk or chicken broth in a bowl and whisk in one or two tbsp of flour to form a thickening for the soup. Slowly add to the simmering soup mixture stirring constantly. Season with salt and pepper to taste. Do not allow to boil or milk will separate. Serve in bowels and top with bacon and cheese.
